Strawberry smash ice cream

Whip up this four ingredient creamy strawberry smash ice cream for the perfect summer treat!

Ingredients Checklist

  • 2 punnets strawberries, hulled
  • 600ml full fat cream
  • 1 x 397g can sweetened condensed milk
  • 1 tsp pure vanilla paste

Instructions

  • Finely dice the strawberries, place in a bowl, using a potato masher, mash 1/3 of the strawberries.
  • Using a stand mixer, whip cream, condensed milk and vanilla till soft peaks form.
  • Stir through the prepared strawberries.
  • Line a suitable container or cake tin with cling wrap, fill with mixture, cover and freeze until firm, overnight for best results.
  • To serve, bring out of freezer 20 minutes prior to serving.
