Peri Peri Chicken & Rice

Instructions

  • Place the chicken in a large bowl for marinating. Add all all the ingredients listed under 'Peri Peri Chicken' ingredients. Cover in gladwrap and allow to marinate for 30 minutes in the fridge.
  • Once chicken has marinated, pre-heat oven to 200C and place the chicken in the roasting dish. Place in oven and roast for 15-20 minutes. Once you notice some colour on the chicken, flip each leg and allow to cook for a further 15-20 minutes so they are evenly coloured and cooked.
  • Four minutes before the chicken is finished, microwave your rice. Place rice in bowl with butter and stir until melted through. Add the beans  and salt to taste. Stir through.
  • Take the chicken out of the oven and serve up your chicken and rice evenly.
