Vegan Peanut Butter Cups by Nature's Delight

Ingredients
- 10 Nature's Delight Dates, pitted
- 3/4 cup pure icing sugar
- 2 tablespoons Nature's Delight Organic Maple Syrup
- 3 tbs cocoa
- 1 cup Nature's Delight Roasted & Salted Peanuts
- 1 pinch sea salt
- 3 tablespoons Nature's Lane Coconut Oil
- 3/4 cup Nature's Delight Smooth Peanut Butter
Equipment
- Muffin tray
- Blender or food processor
- Microwave safe bowl
Instructions
- In a muffin tray place 10 cupcake liners. In a blender add peanuts, dates, 3 tablespoons water, salt and blitz until well combined. Divide among cupcakes and firmly press to form the crust.
- Clean blender. For the peanut filling, add ¼ cup peanut butter and icing sugar. Blitz until smooth. Distribute amongst cupcakes, press down with spoon until even and level.
- For the chocolate top, place ½ cup peanut butter and coconut oil in microwave safe bowl. Microwave for 30 seconds. Then add, cocoa and maple syrup – stir to combine. Divide among cupcakes. Top with extra peanuts and sea salt if you prefer.
- Place in freezer to set for an hour or until firm. Serve & Enjoy!
