Smashed Potato Gem Caesar Salad by Foodland Kitchen

Ingredients
- 500g Potato Gems
- ¼ cup melted butter
- 1 garlic clove, finely chopped
- 1 tbsp thyme leaves
- 2 tbsp grated parmesan + extra to garnish
- 2 baby cos lettuce, roughly chopped
- 2 hard boiled eggs, roughly chopped
- Sea salt
- CAESAR DRESSING
- ½ cup mayonnaise
- 1 garlic clove, finely chopped
- 1 tsp dijon mustard
- 2 tsp Worcestershire sauce
- 1 tbsp lemon juice
Equipment
- Small bowl
- 2 baking paper lined oven trays
- 1 glass
Instructions
- Preheat oven to 200°C and mix together the melted butter, garlic and thyme in a small bowl.
- Place potato gems on two baking paper lined oven trays and roast for 8 minutes.
- Squash the gems with the base of a glass, lightly brush with garlic butter and sprinkle with parmesan.
- Roast for a further 20 minutes or until golden and crisp.
- Meanwhile, mix together the dressing ingredients.
- To serve, toss the cos leaves in the dressing and place onto a serving plate.
- Top with the crispy gems and scatter over the chopped egg.
- Garnish with extra grated parmesan
