Quinoa Protein Bars by Foodland Kitchen

Ingredients
- ½ cup honey
- ½ cup coconut oil
- ½ cup peanut butter
- 2/3 cup brown sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1 2/3 cups oats
- 1 cup puffed quinoa
- 1/3 cup plain flour
- ½ cup desiccated coconut
- ½ cup dried apricot, chopped
- ½ cup almonds, chopped
- ¼ cup pepitas
- ¼ cup linseed
- ¼ cup cranberries
Equipment
- 20x30cm baking tray
- Microwave-safe bowl
Instructions
- Preheat oven to 180°C and line a 20x30cm baking tray with baking paper.
- Place honey, oil and peanut butter into a microwave-safe bowl and microwave for one minute, whisk until smooth.
- Add sugar, vanilla and salt and whisk to combine.
- Add remaining ingredients and stir well to combine.
- Transfer mix to the baking tray and spread out evenly.
- Bake for 20 minutes or until golden.
- Allow to cool to room temperature then place in the refrigerator for two hours to set.
- Portion into bars and store in a sealed container at room temperature.
