Recipe - Quinoa Protein Bars

Quinoa Protein Bars by Foodland Kitchen

Ingredients

  • ½ cup honey
  • ½ cup coconut oil
  • ½ cup peanut butter
  • 2/3 cup brown sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 2/3 cups oats
  • 1 cup puffed quinoa
  • 1/3 cup plain flour
  • ½ cup desiccated coconut
  • ½ cup dried apricot, chopped
  • ½ cup almonds, chopped
  • ¼ cup pepitas
  • ¼ cup linseed
  • ¼ cup cranberries

Equipment

  • 20x30cm baking tray
  • Microwave-safe bowl

Instructions

  1. Preheat oven to 180°C and line a 20x30cm baking tray with baking paper.
  2. Place honey, oil and peanut butter into a microwave-safe bowl and microwave for one minute, whisk until smooth.
  3. Add sugar, vanilla and salt and whisk to combine.
  4. Add remaining ingredients and stir well to combine.
  5. Transfer mix to the baking tray and spread out evenly.
  6. Bake for 20 minutes or until golden.
  7. Allow to cool to room temperature then place in the refrigerator for two hours to set.
  8. Portion into bars and store in a sealed container at room temperature.
