Ingredients
- ½ cup melted butter
- 4 cloves garlic, crushed
- 2 tsp fresh thyme leaves
- 6 large washed potatoes
- Sea salt flakes
- Ground black pepper
- Finely grated parmesan cheese
- Extra thyme for garnish

- Lined baking tray
Instructions
- Preheat oven to 180°C. Line a baking tray with baking paper.
- Combine the melted butter, garlic and thyme in a jug, set aside.
- Lay potatoes on the flat side; cut slices across the top leaving the bottom intact to hold it together. If need be, cut a small layer off the bottom to make it sit flat.
- Place potatoes onto the lined baking tray, generously brush with butter mixture, making sure that some butter gets between slices.
- Season potatoes with salt and pepper, bake in oven for 30 minutes or till tender and golden.
- Sprinkle with grated parmesan and return to oven for a further 5 minutes till golden.
- Serve with extra thyme.
