Ingredients
- 1½ cups cooked short grain rice
- 500g sashimi grade skinless Atlantic salmon, diced
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tsp rice wine vinegar
- Salt to taste
- SUGGESTED TOPPINGS
- Shaved cucumber
- Soy beans
- Finely sliced red onion or sliced spring onion
- Pink pickled ginger
- Radish, finely sliced
- Sliced avocado
- Shiso leaves
- Black sesame seeds
- Kewpie mayonnaise

Instructions
1. Place the salmon in a bowl. Mix together soy sauce, sesame oil, rice wine vinegar and salt to taste.
2. Pour the dressing onto the salmon, marinate for 1 hour.
3. Arrange your selected ingredients in a bowl with rice and marinated salmon, drizzle with Kewpie mayo and sprinkle with black sesame seeds. Tasty and so refreshing!
