Easy Eton mess by Foodland Recipe Kitchen

Ingredients

  • 1 cup fresh strawberries
  • 3/4 cup / 180ml cream, suitable for whipping
  • 1 tbsp mascarpone cheese
  • 1/2 tbsp caster sugar
  • 1 cup ready made meringues

Equipment

  • Large mixing bowl
  • Electric mixer
  • 2 jars or bowls to serve

Instructions

Try this quick and easy dessert this Valentine’s Day! Swap out the strawberries for other fruit such as mango, raspberries or passionfruit.

  1. Quarter and hull strawberries and place in a bowl, sprinkle over caster sugar until all the strawberries are coated. Set aside.
  2. In a separate bowl, whip cream using an electric mixer until soft peaks form. Stir through mascarpone cheese.
  3. Crush meringues using your hands. In a large bowl, gently fold together the strawberries, whipped cream and crushed meringue.
  4. Serve Eton Mess in individual jars or bowls, and top with extra strawberries.
