Ingredients
- 3 rashes bacon, rind removed and finely chopped
- 2 cups self raising flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup tasty cheese, grated + ¼ cup extra
- 2 spring onions, finely chopped
- 2 eggs
- ¾ cup milk
- 125g butter, melted
- 2 cobs of corn, kernels removed

- 12 hole muffin tray
- 12 x muffin cases
- Medium sized fry pan
- Large mixing bowl
Instructions
These corn and bacon muffins are so delicious and filling. Enjoy them cold or heat them up in the microwave.
- Preheat oven to 200°C. Line a 12 hole muffin tray with paper muffin cases.
- Place diced bacon into a medium size fry pan and cook over medium heat for 2 minutes or until golden. Drain on kitchen paper
towel. - Sift flour, baking powder and salt into a large mixing bowl. Add grated cheese, spring onions and bacon, mix through.
- Whisk together the eggs, milk and melted butter in a jug. Make a well in the centre of the flour mix and pour egg mix into the well.
Using a spatula, gently fold together until just combined; add corn kernels and stir through the mixture. - Spoon mixture into prepared muffin tray; sprinkle with extra tasty cheese.
- Bake for 25-30 minutes or until a skewer inserted at centre comes out clean. Transfer to a wire rack to cool. Serve.
