Apple & Almond Cake

Redlove® Apple & Almond Cake

One of the great things about cooking with Redlove® apples is that their colour becomes even more vibrant when you bake them. How pretty do those Redlove® apples look, crowning the cake? Enjoy the flavours of this delicious dessert – tart Redlove® apples perfectly balanced with the sweetness of the cake and the aromatic ground almonds. It’s also gluten free!

Ingredients Checklist

  • 3 cups raw or roasted almonds, with skins
  • 125g unsalted butter, softened
  • ¾ cup caster sugar
  • 4 eggs
  • 1 teaspoon vanilla bean paste
  • 3 Redlove® apples
  • 2 tablespoons caster sugar
  • Icing sugar, to serve

Instructions

  • Preheat the oven to 160 degrees Celsius.
  • Using a food processor or nutribullet, grind the almonds into almond meal (until they are fine consistency).
  • Set aside.
  • Using an electric mixer, beat the butter and ¾ cup sugar until it is pale and creamy, approximately 10 minutes.
  • Add the eggs, one at a time, beating after adding each.
  • Mix in the vanilla bean paste.
  • Fold in the almond meal until well combined.
  • Grease a 25cm cake or tart tin with butter.
  • Add the cake batter to the tart.
  • Peel, core and halve the apples, and thinly slice.
  • Place them in a bowl and sprinkle with 2 tablespoons of sugar.
  • Mix until the sugar has coated the apples.
  • Arrange them on top of the cake.
  • Bake for 60 minutes
  • Remove from the oven and allow the cake to sit in the baking tin until completely cool.
  • Dust with icing sugar and enjoy!
  • The cake will have a very moist texture and tastes wonderful with vanilla ice cream.
