Ingredients Checklist
- 3 cups raw or roasted almonds, with skins
- 125g unsalted butter, softened
- ¾ cup caster sugar
- 4 eggs
- 1 teaspoon vanilla bean paste
- 3 Redlove® apples
- 2 tablespoons caster sugar
- Icing sugar, to serve
Instructions
- Preheat the oven to 160 degrees Celsius.
- Using a food processor or nutribullet, grind the almonds into almond meal (until they are fine consistency).
- Set aside.
- Using an electric mixer, beat the butter and ¾ cup sugar until it is pale and creamy, approximately 10 minutes.
- Add the eggs, one at a time, beating after adding each.
- Mix in the vanilla bean paste.
- Fold in the almond meal until well combined.
- Grease a 25cm cake or tart tin with butter.
- Add the cake batter to the tart.
- Peel, core and halve the apples, and thinly slice.
- Place them in a bowl and sprinkle with 2 tablespoons of sugar.
- Mix until the sugar has coated the apples.
- Arrange them on top of the cake.
- Bake for 60 minutes
- Remove from the oven and allow the cake to sit in the baking tin until completely cool.
- Dust with icing sugar and enjoy!
- The cake will have a very moist texture and tastes wonderful with vanilla ice cream.
